Why We Love It

Here's something most people don't realize: Angus and Wagyu cattle are optimized for completely different things. Angus is bred for size, feed efficiency, and consistent muscular development — which is why the flavor is assertive and the texture holds up beautifully to high heat and hard sears. Australian Wagyu, on the other hand, is the product of Japanese Wagyu genetics crossed and refined under Australia's vast pasture systems, producing cattle with extraordinary intramuscular fat deposition (marbling) at a scale that Japan simply can't match in volume.

Australia is now the world's largest Wagyu herd outside Japan, and their crossbreeding programs have produced something genuinely unique — beef with the flavor depth of Wagyu marbling and the structural integrity of cattle raised in open-range conditions. It's not a compromise. It's a different expression of the same genetics, shaped by a different land.

How should I cook it?

General Principle: These Two Cuts Don't Cook the Same Way

The most important thing to understand with a dual-breed box is that the Wagyu cuts need lower heat and shorter resting time than your Angus cuts. The intramuscular fat in Wagyu renders at a lower temperature — push it to well-done and you've lost what you paid for.

For the Angus Cuts

High heat, hard sear: Cast iron or carbon steel at ripping hot. The Maillard reaction is your friend here — Angus fat needs heat to bloom.

Target internal temp: 130–135°F for medium-rare. Pull at 127°F and rest 5–8 minutes under a loose foil tent.

Salt aggressively and early: Dry brine uncovered in the fridge 12–24 hours before cooking. Angus benefits enormously from this.

Reverse sear works exceptionally well on thicker Angus cuts — 250°F oven until 120°F internal, then a 90-second sear per side.

For the Australian Wagyu Cuts

Medium heat, not screaming hot: The marbling renders fast. A slightly lower pan temp gives you control.

Target internal temp: 125–130°F for medium-rare. Wagyu fat is liquid at serving temp — it will carry over more than Angus.

Keep seasoning simple: Flaky salt and black pepper only. The fat is the flavor — don't bury it.

Rest less, serve sooner: 3–5 minutes is enough. Wagyu's fat is already mobile — a long rest just cools the plate.

Slice against the grain and go thinner than you would Angus. The fat-to-muscle ratio means smaller bites deliver more impact.
