How should I cook it?

The Grill (Recommended)

Wild boar is leaner than domestic pork, which means it's less forgiving at high heat. Two-zone grilling is your best friend here. Set one side of your grill to medium-high (around 375–400°F) and leave the other side unlit. Start the links on the indirect side for 8–10 minutes, turning once, until the internal temp hits 140°F. Then move them directly over the flame for 2–3 minutes per side to get that caramelized casing and those char marks. Pull at 160°F internal temperature — the USDA standard for pork sausage — and rest for 3 minutes. The cheddar will be fully melted and the casing will snap clean when you bite through.

Cast Iron / Stovetop

Add a small amount of neutral oil (or skip it — the cheese will render enough fat) to a cast iron pan over medium heat. Add links and cook low and slow, turning every 2–3 minutes for even browning. Total time: approximately 15–18 minutes. Do not crank the heat to rush it — the cheddar pockets will burst through the casing and you'll lose the best part. Deglaze the pan with a splash of lager or apple cider after you pull the sausages; that fond is pure gold spooned back over the links.

Oven + Broil Finish

Preheat oven to 375°F. Place links on a wire rack over a sheet pan and bake for 20–22 minutes until internal temp reaches 150°F. Switch to broil on high for the final 2–3 minutes to blister the casing. Rest before serving.
