Here's what most people don't realize about Wagyu burger patties: the magic isn't just the beef itself — it's the fat-to-lean ratio and fat composition. Wagyu cattle carry a higher percentage of oleic acid (the same monounsaturated fat found in olive oil) compared to conventional beef. That translates to a softer, lower-melting-point fat that starts releasing flavor at temperatures your tongue can actually taste. A standard beef patty's fat needs serious heat to render; Wagyu fat practically melts on contact.

Australian Wagyu sits in a genuinely interesting space. These animals are raised with full-blood or crossbred Wagyu genetics on Australian pasture systems — longer growing periods, cleaner feed programs, and a climate that produces beef with serious marbling without the hyper-controlled feedlot intensity of Japanese production. The result is a burger that eats rich and beefy, with that signature Wagyu butteriness, but with enough structural integrity to actually hold together on a grill.

Wagyu ground beef shrinks less than conventional beef because the fat renders slowly rather than purging out fast, so you get close to what you paid for on the plate. How should I cook it?

The Most Important Rule: Lower Heat Than You Think

Wagyu burger patties do not cook like regular burgers. The high fat content means flare-ups happen fast, and charring a Wagyu patty is a real waste. Drop your heat one level from wherever you'd normally cook a burger.

Recommended Method: Cast Iron or Flat-Top Skillet

Pull patties from the fridge 15–20 minutes before cooking — never cook Wagyu cold from the fridge.

Season generously with kosher salt and black pepper right before cooking. The fat carries flavor well; you don't need much else.

Heat a cast iron skillet or flat-top over medium to medium-high heat. You want a sear, not a scorching.

Place the patty in the pan — do not press it down. You're preserving that fat inside the patty, not squeezing it out.

Cook 3–4 minutes per side for a medium-rare to medium finish (internal temp 130–140°F). This is the sweet spot where the fat has fully rendered but the beef stays juicy.

Rest for 2 minutes before serving. The carry-over heat and fat redistribution matter here.

On the Grill

Use a two-zone setup — high heat on one side, medium on the other.

Sear over high heat for 60–90 seconds per side, then finish over medium heat to your target temperature.

Keep a spray bottle nearby for fat flare-ups. Don't walk away from these.

Target Temperature

We recommend pulling at 130–135°F (medium-rare to medium). At well-done temps, you've rendered out most of what makes this patty special. An instant-read thermometer is worth using here — trust the number, not the clock.

Bun & Build Notes

A brioche or potato bun works best — you need something with enough fat content to stand up to the richness of the patty without going soggy. Keep toppings simple: the beef is the story.

Grilling Tips

Let your Australian Wagyu sit at room temperature for 30–45 minutes before grilling to ensure even cooking and maximum flavor.

Grill over direct high heat for about 2–3 minutes per side for medium-rare, then let it rest for 5 minutes before slicing thinly against the grain to showcase its buttery texture.

Cast Iron Pan

Preheat your cast-iron pan over medium-high heat until it’s smoking hot—this ensures a perfect sear that locks in wagyu’s buttery juices.

Pat the steak dry and season lightly with flaky sea salt just before placing it in the pan; no oil is needed thanks to wagyu’s rich marbling.

Sear for 2–3 minutes per side, then baste with a knob of butter and a smashed garlic clove for the last minute before resting for 5 minutes and slicing against the grain.

Sous Vide + Sear (Nick's Favorite)

For Medium-Rare (135 degrees) Sous Vide the steak for 1-2 hours at 120 degrees.

Remove the steak from the bag, season, and sear until a crust is obtained (grill, pan, torch).

Rest 5 minutes and cut against the grain.
