How should I cook it?

The Hard Sear (Most Popular)

This is the move most people are here for — a crust that cracks and an interior that's barely kissed by heat.

Pat the block completely dry with paper towels — surface moisture is the enemy of a good crust

Season generously with coarse salt, cracked pepper, and optionally sesame seeds pressed into the surface

Get a cast iron or stainless pan screaming hot — add a high smoke point oil (avocado, grapeseed) and wait until it just begins to smoke

Sear each face for 45–60 seconds — you want color, not cook-through

Target an internal temp of 95–105°F for rare center; pull it at 90°F because carryover will get you there

Rest 2 minutes, then slice against the grain with a sharp knife in one clean pull — no sawing

Raw Applications (Sashimi / Poke / Crudo)

The block format makes this ideal for raw prep. Slice it while it's still cold — slightly firmer fish means cleaner, more precise cuts.
