How should I cook it?

Pan Seared (Recommended)

This is the method that shows off what the fish actually is. The fat in the flesh bastes the meat from the inside while a golden crust forms on the outside.

Thaw in the refrigerator overnight or under cold running water in the vacuum seal.

Pat completely dry — moisture is the enemy of a good sear on fish.

Season simply: kosher salt and white pepper. The fish has enough going on that you don't need to bury it.

Heat a stainless or cast iron pan over medium-high heat with a high smoke-point oil (avocado or grapeseed). The pan should be hot before the fish goes in.

Place skin-side down (if skin-on) and press gently for the first 30 seconds to prevent curling. Cook 70% of the way through on the first side — roughly 4-5 minutes depending on thickness. You'll see the flesh turn opaque from the bottom up.

Flip once, add a knob of butter, a crushed garlic clove, and a thyme sprig to the pan. Baste for 1-2 minutes.

Internal target: 130-135°F (54-57°C). It will carry over slightly. Pull it when it just barely flakes under light pressure.

Oven Roasted / Miso Glazed

Classic preparation — the fat in the fish holds up beautifully to the oven's dry heat, and the umami-on-umami combination with miso is a natural match.

Mix white miso, mirin, sake, and a touch of sugar — marinate the fillets for a minimum of 2 hours, ideally overnight in the fridge.

Wipe off excess marinade (sugar burns), place on a foil-lined sheet pan.

Roast at 400°F (205°C) for 12-15 minutes depending on thickness, finishing under the broiler for 1-2 minutes to caramelize the surface.

Watch it closely under the broiler — the sugars in miso will go from beautifully caramelized to burnt in about 45 seconds.

Key Tips

Don't overcrowd the pan — steam kills a sear.

The high fat content means this fish is extremely forgiving at 5-10°F over target. It won't dry out the way a lean fish like halibut or cod will.

Resting isn't as critical as with meat, but 2 minutes off heat before plating lets the residual heat finish the center evenly.

Pairs best with Chablis, white Burgundy, or a quality Pinot Grigio — the acidity cuts the fat and lifts the oceanic umami without fighting it.
