How should I cook it?

General Approach

Because the Halal Box contains multiple cuts, your cooking approach will vary by what's inside — but there are a few principles that apply across the board when cooking halal-processed meat. The full blood drainage means these cuts may brown slightly faster on high heat than you're used to; there's less moisture from residual blood in the pan, so watch your sear closely.

For Steaks and Chops

Bring to room temperature — 30 to 45 minutes out of the fridge before cooking

Pat completely dry — halal cuts are already well-drained, but surface moisture is still the enemy of a good sear

High heat, short sear — cast iron or carbon steel at ripping hot, 2-3 minutes per side for most steak cuts

Use a thermometer: 52-54°C (125-130°F) for medium-rare, 57-60°C (135-140°F) for medium

Rest before cutting — minimum 5 minutes for steaks, up to 10 for thicker cuts

For Roasts and Braises

Sear hard first — the Maillard reaction is your foundation; don't skip it

Low and slow for tougher cuts — 140-160°C (285-325°F) oven or a covered braise for 3-4+ hours depending on cut size

Internal temp for braised cuts: you're not chasing medium-rare here — you want 90-95°C (195-205°F) for collagen breakdown and genuine tenderness

Seasoning Note

With cleaner-tasting halal meat, simpler seasoning often wins. Kosher salt, cracked black pepper, and a high-quality fat (clarified butter, tallow, or a neutral oil) let the meat speak. Build complexity with aromatics — garlic, rosemary, thyme — rather than heavy marinades that mask the natural flavor you paid for.

The Meatery ships orders via 2nd Day Express Air, typically using UPS. They ship on Mondays, Tuesdays, and Wednesdays to ensure weekday delivery. Orders are packed in sturdy cooler boxes with gel packs and dry ice to maintain freshness. While the meat usually arrives frozen, some thawing is normal and it can be safely refrozen.
