How should I cook it?

The Non-Negotiable: High Heat and Proper Slicing

Hanger steak has two rules. Break either one and you'll wonder why anyone raved about it. Follow both and you'll understand immediately.

Rule 1: Cook it hot and fast to medium-rare (130–135°F internal). Hanger steak has significant connective tissue running through its center and a coarse muscle grain. It does not respond well to well-done temperatures — the fibers tighten and it becomes tough and chewy. Medium-rare keeps it tender and lets the fat render just enough to carry flavor without seizing up.

Rule 2: Slice against the grain, and know where the grain runs. The hanger has a visible longitudinal grain — look at the muscle fibers before you cut. Slicing parallel to them gives you long, chewy bites. Slicing perpendicular shortens those fibers and makes the steak dramatically more tender on the palate.

Best Cooking Methods

Cast Iron / Screaming Hot Pan: Pat completely dry, season aggressively with salt and pepper (or your preferred dry rub), sear 3–4 minutes per side in a lightly oiled cast iron over high heat. Rest 5 minutes. Slice thin against the grain.

Grill: Direct high heat, same timing as above. The slight char complements the mineral richness of grass-fed beef exceptionally well.

Marinated: Because of its open grain, hanger soaks up marinade quickly — 2–4 hours is enough. Acid-forward marinades (citrus, vinegar, wine) work beautifully and help tenderize the connective tissue further. Don't go overnight or you'll start breaking down the texture.

Temperature Guide

Rare: 120–125°F — Valid, very tender, intensely bloody

Medium-Rare: 130–135°F — Recommended sweet spot

Medium: 140–145°F — Acceptable but pushing the limit on tenderness

Well Done: Not recommended — the texture suffers significantly past 150°F

Pro tip: Remove from heat 5°F before your target — carryover cooking will take it the rest of the way during the rest.

The Meatery ships orders via 2nd Day Express Air, typically using UPS. They ship on Mondays, Tuesdays, and Wednesdays to ensure weekday delivery.
