How should I cook it?

The Golden Rule: Don't Overcook It

Ora King's high fat content is its superpower, but it also means you have less margin for error than a lean fish — not because it dries out fast, but because overcooking renders out the very oils that make it special. Pull it at 125–130°F internal for silky, just-set flesh. If you're nervous, go to 135°F max. Beyond that, you're paying Ora King prices for Atlantic salmon results.

Pan Sear (Best Method)

Pat the fillet completely dry — moisture is the enemy of a good crust

Score the skin lightly with 3–4 shallow cuts to prevent curling

Heat a stainless steel or cast iron pan over medium-high heat with a neutral, high-smoke-point oil (avocado or grapeseed)

Season generously with salt right before it goes in the pan

Place skin-side down and press gently for 30 seconds to maintain contact

Cook skin-side down for 4–5 minutes — you want about 75% of the flesh to turn opaque from the bottom before you flip

Flip, kill the heat, and let residual pan heat finish the top for 60–90 seconds

Rest 2 minutes before serving — it's still cooking internally

Oven Roast (Low and Slow)

Set oven to 275°F — this is a gentle roast, not a blast

Season and place skin-side down on a lightly oiled rack over a sheet pan

Roast for 20–25 minutes until the thickest part reads 125–130°F

The fat will slowly baste the fish from the inside — no basting required

Raw Applications (Crudo, Sashimi, Poke)

Ora King is one of the few farmed salmons safe to serve raw without prior freezing (check your sourcing, but aquaculture-raised King salmon from certified facilities generally meets FDA guidelines).
