Our Australian Wagyu Hamburger Patties are ground from whole Wagyu cuts, which means you're getting that signature intramuscular fat — the kind that bastes the meat from the inside as it cooks. The result is a patty that stays juicy at a higher internal temp, cooks more forgivingly, and tastes nothing like a standard beef burger.

Wagyu beef has a higher concentration of monounsaturated fats (oleic acid — the same fat found in olive oil) compared to standard beef. Australian Wagyu occupies a sweet spot that we genuinely appreciate. It's not as delicate or overwhelmingly fatty as Japanese A5 — which, honestly, makes it better suited for burgers. How should I cook it?

The Core Rule: Don't Overthink It, But Don't Overcook It

Wagyu patties cook faster than standard beef patties of the same size because the fat renders quickly and conducts heat more efficiently. Keep that in mind — these are not 6-minute-per-side burgers.

Recommended Method: Cast Iron or Flat-Top Griddle

Let patties come to room temperature for 15–20 minutes before cooking — this is more important with Wagyu than standard beef because of that low-melt fat.

Preheat your cast iron or griddle over medium-high heat. You want a strong sear, but not screaming hot — excessive heat will burn the exterior before the fat has time to render properly.

No oil needed. The Wagyu fat will handle that for you within seconds of hitting the pan.

Season generously with kosher salt and coarse black pepper right before cooking — nothing more is needed. Let the beef do the talking.

Cook 3–4 minutes per side for medium (around 140–145°F internal). We recommend pulling at 135°F and letting carryover do the rest.

Do not press the patty. Ever. Especially not with Wagyu — you're literally squeezing out the thing you paid for.

On the Grill

Use a two-zone setup — high heat on one side, medium on the other.

Sear over high heat for 2 minutes per side, then finish over medium heat to your target temp.

Watch for flare-ups — the Wagyu fat drips and ignites more than standard beef. Keep the lid nearby.

Target Temperatures

Medium-Rare: 130–135°F (recommended for maximum juiciness)

Medium: 140–145°F (still exceptional — this is the forgiving sweet spot)

Medium-Well and beyond: Technically possible, but you're working against what makes this patty special.

Rest & Build

Rest the patty for 2–3 minutes tented loosely with foil before placing it on the bun. A brioche bun, some caramelized onions, and a sharp aged cheddar are all this burger really needs. Keep your toppings deliberate — let the beef be the star.

Grilling Tips

Let your Australian Wagyu sit at room temperature for 30–45 minutes before grilling to ensure even cooking and maximum flavor.

Grill over direct high heat for about 2–3 minutes per side for medium-rare, then let it rest for 5 minutes before slicing thinly against the grain to showcase its buttery texture.

Cast Iron Pan

Preheat your cast-iron pan over medium-high heat until it’s smoking hot—this ensures a perfect sear that locks in wagyu’s buttery juices.

Pat the steak dry and season lightly with flaky sea salt just before placing it in the pan; no oil is needed thanks to wagyu’s rich marbling.

Sear for 2–3 minutes per side, then baste with a knob of butter and a smashed garlic clove for the last minute before resting for 5 minutes and slicing against the grain.

Sous Vide + Sear (Nick's Favorite)

For Medium-Rare (135 degrees) Sous Vide the steak for 1-2 hours at 120 degrees.

Remove the steak from the bag, season, and sear until a crust is obtained (grill, pan, torch).

Rest 5 minutes and cut against the grain.
