How should I cook it?

Starting Point: It's Already Smoked

These sausages are fully smoked, which means your job isn't to cook them through — it's to develop the crust and wake up the flavor. Treat this like finishing, not cooking from raw. Internal temp target is 165°F, but because they're pre-smoked, you're mostly just heating to temp and building color.

Grill (Recommended)

Preheat grill to medium heat (375–400°F) — not screaming hot

Grill links for 10–14 minutes, turning every 3–4 minutes

You want a deep amber-to-mahogany crust with some light char on the edges

Duck fat renders fast — if you see flare-ups, move the links to indirect heat immediately

Let rest 3 minutes before cutting — the brandy-infused juices will redistribute

Cast Iron / Stovetop

Heat pan over medium heat — add a small drizzle of neutral oil or a knob of butter

Sear links for 3–4 minutes per side until deeply browned on all sides

Finish with a splash of hard cider or apple brandy in the pan and cover for 2 minutes — this steams the interior and echoes the brandy flavor already in the sausage

Oven (Low & Slow Finish)

Preheat to 325°F

Place on a wire rack over a sheet pan and roast for 20–25 minutes

Broil for the final 2–3 minutes to get color on the casing
