This is intentional, purposeful grinding of Japanese A5 Wagyu at a 75/25 lean-to-fat ratio, which means you're getting that legendary intramuscular fat distributed through every single bite rather than locked inside a steak. The fat in A5 Wagyu melts at a lower temperature than conventional beef fat — around 77°F versus 104°F — which is why a wagyu burger cooks and eats completely differently than anything you've made before. Expect a crust that forms fast, a juicy interior that almost bastes itself, and a richness that genuinely doesn't need cheese, bacon, or any supporting cast.

Why We Love It

Here's the thing about grinding A5 Wagyu that most people don't think about: when you grind a whole muscle cut, you're taking all that marbling — that intricate web of fat that runs through the meat — and distributing it evenly throughout the grind. A well-marbled A5 ribeye is stunning, but the fat is concentrated in channels. In ground form, every gram of meat carries that fat with it. It's a different kind of luxury — more democratic, more accessible in how you cook it, but no less impressive on the palate.

The 75/25 ratio is intentional and important. Standard supermarket ground beef runs 80/20 at best. Wagyu fat is so rich and has such a low melt point that 75/25 hits the sweet spot — enough structure to hold a patty together, enough fat to self-baste through a hard sear without flaring up or drying out. You don't need to add anything to this meat to make it taste extraordinary. That's the point.

How should I cook it?

Understand the Fat First

Wagyu fat renders fast and at low heat. This means two things: don't overwork the patty (the fat will start to melt from your hands), and don't walk away from the heat. A5 ground beef cooks quicker than you expect and the flare-ups on a grill can surprise you. Cast iron or a flat-top griddle gives you the most control.

Smash Burger Method (Recommended)

Portion loosely into 3–4 oz balls — don't pack them tight

Heat a cast iron skillet or griddle over high heat until smoking

Place the ball on the surface and immediately smash flat with a spatula or burger press

Cook 1.5–2 minutes until the crust is deeply browned and the edges are lacey and crisp

Flip once — 30–45 seconds on the second side is enough

Target internal temp: 130–135°F for medium-rare. The fat will keep it moist even at medium (145°F) but don't push past that

Classic Thick Patty Method

Form into 6 oz patties, no thicker than ¾ inch — press a slight dimple in the center

Season with salt only, right before cooking — no need for anything else

Cast iron over medium-high heat, 3–4 minutes per side

Rest 3 minutes before serving — the fat needs a moment to redistribute

Beyond Burgers

This grind works beautifully in a Bolognese (cook low and slow — the fat enriches the sauce naturally), meatballs (skip the usual breadcrumb padding, let the meat speak), or a tartare if you're comfortable sourcing A5 for raw applications. Whatever you make, season simply. Salt, maybe pepper. This beef doesn't need help.

Don't cook from frozen — thaw in the fridge overnight for best results

NICK'S TRICK FOR COOKING A5 WAGYU (IT'S REALLY EASY)

Step 1: Cut Wagyu into Strips

I always tell customers if you're worried about cooking A5 Wagyu, the easiest way to do it is to cut it into two-finger-wide strips and cook one strip at a time while you build your confidence.

This works best on Ribeyes and New York Strips, but can also work on Denver steaks.

Step 2: Heat & Grease Cast Iron Pan

Preheat your cast-iron pan to medium-high heat.

If you have a small piece of fat, you can run it over the cast-iron pan to grease it. I do not recommend using any external greasing agent, such as butter or oil, as it adds a different flavor.

Step 3: Sear on Cast Iron Pan

Cast iron pans have a really cool way of grabbing the meat and releasing it when the crust has been properly applied. This process takes about 45 seconds to a minute per side.

Cook your first piece and eyeball it, and give it a try. Make your adjustments from there. Trust me, even if it's a little overcooked, it's still going to be incredibly delicious. And don't forget to put a really great salt on it.
