How should I cook it?

Less Is More — And We Mean That Literally

A5 Wagyu requires a fundamentally different approach than any other steak you've cooked. The rules you know — high heat, long sear, butter basting — work against you here. The fat content is so high that the beef essentially self-bastes from the inside. Your only job is to apply heat evenly and get out of the way.

The Method

Bring it to room temp: Take the steak out of the fridge 20–30 minutes before cooking. This matters more with A5 than any other beef because of how quickly the fat reacts to temperature change.

Season minimally: A light pinch of flaky salt right before cooking. No pepper, no marinades — you want to taste the beef, not your seasoning rack.

Use a dry, very hot cast iron or carbon steel pan: No oil needed. The fat from the steak will render almost immediately and provide more than enough lubrication.

Sear in short intervals: 45–60 seconds per side for a cut this size. You're looking for a golden-brown crust, not a hard char. The high fat content means it can go from perfect to bitter quickly if you push it.

Target internal temp: 125–130°F (rare to medium-rare). A5 at medium or above loses the textural quality that makes it extraordinary — the fat firms up and the silkiness disappears.

Rest for 3–4 minutes tented loosely with foil before slicing.

Serving Tip

Slice against the grain into thin strips (¼ inch or less) before eating. A5 is extraordinarily rich — a full 8–10oz steak is best enjoyed in small bites, ideally shared or served as part of a multi-course meal. A small dish of flaky sea salt on the side and a squeeze of yuzu or lemon cuts through the richness beautifully. Do not drown it in sauce.

NICK'S TRICK FOR COOKING A5 WAGYU (IT'S REALLY EASY)

Step 1: Cut Wagyu into Strips

I always tell customers if you're worried about cooking A5 Wagyu, the easiest way to do it is to cut it into two-finger-wide strips and cook one strip at a time while you build your confidence.

This works best on Ribeyes and New York Strips, but can also work on Denver steaks.

Step 2: Heat & Grease Cast Iron Pan

Preheat your cast-iron pan to medium-high heat.

If you have a small piece of fat, you can run it over the cast-iron pan to grease it. I do not recommend using any external greasing agent, such as butter or oil, as it adds a different flavor.

Step 3: Sear on Cast Iron Pan

Cast iron pans have a really cool way of grabbing the meat and releasing it when the crust has been properly applied. This process takes about 45 seconds to a minute per side.

Cook your first piece and eyeball it, and give it a try. Make your adjustments from there. Trust me, even if it's a little overcooked, it's still going to be incredibly delicious. And don't forget to put a really great salt on it.
