The marbling is caused by the high amount of fat that is interspersed within the muscle, which results in amazing flavor, tenderness and richness. The Australian Wagyu Association (AWA) is the only Halal certifier for Wagyu in Australia, and all Wagyu produced by AWA members is Halal certified.
