How should I cook it?

A Note Before You Start

Wagyu fat melts at a lower temperature than commodity beef fat — around 77°F compared to 97°F for standard cattle. That's not trivia; it changes how you cook. Go lower and slower than you think, and let the fat do the work.

Australian Wagyu Hanging Tender (8oz)

One of the most flavorful cuts on the animal — heavily worked muscle, deeply beefy, with a loose grain that loves high heat.

Season simply with salt. Sear in a ripping hot cast iron 2–3 minutes per side for medium-rare (130°F internal).

Slice against the grain — this is non-negotiable with hanging tender. The grain runs at an angle; find it before you cut.

Australian Wagyu Hamburger Patties (16oz)

Wagyu burger patties cook faster than you're used to. The fat renders quickly — cook over medium heat, not high, or you'll flare and lose fat before it can do its job.

Target 130–135°F internal for medium-rare. Use a thermometer. Smash burger technique works beautifully here.

Skip the toppings that drown it out. Let the beef be the main event.

Australian Wagyu Filet Mignon Skewers (8oz)

Filet is the most tender cut but lowest in intramuscular fat — the skewer format helps here because the smaller surface area means faster cook time and less risk of drying out.

Grill or broil over high heat, 2–3 minutes per side. Target 125–130°F for medium-rare.

A light brush of neutral oil before grilling prevents sticking without masking the flavor.

Fullblood Denver Steak (8oz)

Cut from the chuck, the Denver is one of the most underrated steaks on the animal — heavily marbled even in standard beef, and extraordinary in Wagyu.

Best seared in cast iron with butter, garlic, and thyme basting. 2.5–3 minutes per side, targeting 128–132°F internal. Rest 5 minutes.

Slice thin against the grain — the grain changes direction in this cut, so pause and look before slicing.

Fullblood Ribeye (9–11oz)

This is the showcase cut of the box. Don't overcomplicate it.

Salt 45 minutes before cooking. Bring to room temperature. Sear in a dry, preheated cast iron pan — no oil needed, the fat will render immediately — 2–3 minutes per side for medium-rare (130°F internal).

Rest 5–7 minutes on a wire rack. The carry-over cook on Wagyu is real; pull it 5°F before your target.

Skip the heavy sauces. Flaky salt and nothing else.

The Meatery ships orders via 2nd Day Express Air, typically using UPS. They ship on Mondays, Tuesdays, and Wednesdays to ensure weekday delivery. Orders are packed in sturdy cooler boxes with gel packs and dry ice to maintain freshness. While the meat usually arrives frozen, some thawing is normal and it can be safely refrozen.
