🥩 Dive into the exquisite world of gourmet with our top-tier Japanese A5 Wagyu sirloin fillet. Hailing from the esteemed Kobe region, this wagyu sirloin is the epitome of culinary luxury. Known as the "baseball" cut, its shape is distinctly plump, but don't mistake it for the Filet Mignon! This kobe sirloin steak offers a more budget-friendly alternative without compromising on tenderness or marbling.

The Kobe Wine Beef legacy is rooted in the famous Hyogo prefecture. While Kobe is recognized globally for its A5 Wagyu, it's also home to a thriving wine industry. Our dedicated farmers from the Kobe Wine Beef Association have formed a remarkable partnership with local wine producers. The secret? The cows are nourished with byproducts from wine production, leading to elevated polyphenol levels. This results in calm, low-stress cows, translating to an exceptionally tender meat experience. Truly a fusion of wine and dine!

To assure you of its authenticity, each Japanese A5 Wagyu comes with a Certificate of Authenticity, featuring the unique nose print of the cow.

Whether you're a fan of sous-vide with a sear finish, grilling, reverse-searing, or smoking, this sirloin fillet is versatile and ready to elevate your meal. Don't miss out on this treat; it's a gastronomic journey you must embark on! 🍷🍖

Cooking Tip:

Our favorite method for Filet Mignon & Sirloin Filets is Sous Vide with a high-heat sear finish. If you don't have a Sous Vide, no worries! Reverse-sear, grilling, or butter-basted in a cast iron pan are also fantastic methods that will produce great results.

Pairs well with...
  • Younger Burgundy
  • High-tannin Cabernet
  • Japanese Whisky
  • Highball
  • Club Soda with a splash of Cranberry Juice

Frequently Asked Questions

HOW IS THE MEAT SHIPPED?

We ship using 2nd Day Express Air, typically UPS. We only ship on Mondays, Tuesdays and Wednesdays to ensure weekday delivery. Your meat is safely packed in a sturdy cooler box and kept cold with a combination of gel packs and dry ice. Usually the meat arrives frozen, but some thawing is totally normal and the meat can be safely refrozen.

WHERE DO YOU GET YOUR MEAT FROM?

The Meatery goes to great lengths to source only the highest quality proteins from the most reputable, humane suppliers from around the world.

IS EVERYTHING I SEE ON THE WEBSITE AVAILABLE IN THE STORE?

Everything on the website is also available at the Mission Gorge store. Our store in Mission Hills has a broad selection of Wagyu but also is a neighborhood concept with a great "everyday" selection of items (Choice Beef, Chicken, Spices etc.) that are not listed on the website.

DO YOU PROVIDE DELIVERY OR PICKUP LOCALLY?

Yes! We deliver through Uber Eats and DoorDash, and local pickup occurs at Mission Gorge.

HOW DOES MEATERY LIVE WORK?

Between the hours of 11am - 6pm PST, we are standing by to video chat with you and help you pick the perfect meats. If you want, we're even happy to show you the meat you'll be shipped so you can pick the absolute perfect cut for you. Unless you enable video, we can only hear your voice (and we're totally ok with that!) To initiate a call simply click the "Meatery Live" button on the left hand side (on mobile) or the "Video Chat with a Butcher" on the bottom right (on desktop).

CAN WE CHAT INSTEAD?

Yes! You have the option to initiate a chat with us if you prefer not to have a phone call.

Was expecting a better cut

I was expecting my cut to look somewhat like the picture. Unfortunately, what I got was an extremely thick almost to the point of it being as thick as it was long, making a square. For the price, I was thinking, it would be a more normalized cut. Being the shape it was meant I needed to cut it in half to get a normal thickness. So here I have two medallions of beef which is fine I guess, but like I said. Not really what I expected.

Delicious and Tender

This steak was amazing. Definitely one of the best steaks I ever made at home. A++

Great Steak

A leaner wagyu cut with all the wagyu flavor. You can enjoy larger portions of this steak than you can with the more fatty ribeyes and strip steaks. Highly recommend for those who are looking to try wagyu without breaking the bank on a more expensive cut. Just keep in mind that although this cut is still classified as A5, it is a sirloin so it will be leaner than those ribeyes you see online (but it is still well marbled).
