Exclusively pioneered by Nick, this steak is more than just a cut—it's a culinary masterpiece that pays homage to the revered wagyu beef A5. Hailing from the "Rib Cap" or "Lifter" section of the rib, this cut stands distinct from the Spinalis Dorsi, offering a bite that's unparalleled in richness and texture.

The steak's marbling is nothing short of artistry, reminiscent of the intricate patterns that are the signature of top-grade Japanese Wagyu. Its taste? An exquisite balance, marrying the buttery decadence of A5 Wagyu with the satisfying chew akin to an American steak 🍴. Whether you're thinking of a sous vide and sear, a classic reverse sear, or even daring to pop it on the smoker, this steak promises a flavor explosion with every bite 😋. Dive in and experience a steak that not only tantalizes the palate but also tells a story of craftsmanship and passion.

Japanese A5 Wagyu | Rib Cap Steak | 7-9oz

Cooking Tip:

Because the Rib Cap is cut from above the Ribeye (Lifter Meat) it is a grainier cut. We find the best preparation of this beautiful cut is a slightly slower cook, either in a Sous Vide for 2-4 hours or reverse seared with a sear finish.

Pairs well with...
  • Younger Burgundy
  • High-tannin Cabernet
  • Japanese Whisky
  • Highball
  • Club Soda with a splash of Cranberry Juice

Was not impressed

I am quite positive that I did not receive a rib cap steak. It looked like it might have been a piece cut from a NY strip. None of the signs of a rib cap were present. And the other piece was a thin (less than half inch) wide (5" tapering to 1") about 5" long triangle piece of meat. Flavor was decent but didn't blow me away like before. I have had A5 ribeye before and these were nothing close to that. Would not buy again.
