Poor cut great flavor

The taste and tenderness of the meat it self was amazing the cut, ill start with that, The disappointed came with the cut , gristle and waste was more that I would of expected from a high quality steak, about 30% the cut was more of a chunk if that makes sense with heavy bands of unchewable thick gristle. I ended up thinly slicing in a buttery garlic sauce. Disappointed in the waste and gristle but loved the tenderness of what was left of the meat and favor after the waste.
