Australian Wagyu | Monster Hawk
The steak itself was very good, taste and texture I felt was very good as well. It was a great combination of Japanese and Australian beef. The bone was a little big but it did make for a great presentation.

Falling short in two ways…
First off, everyone knows that not all wagyu is created equal. True Japanese wagyu is very different from Australian wagyu which is very different from American wagyu, etc.. That said, don’t expect true Japanese wagyu here, which I didn’t, but there are two main issues I have with this steak that should not have been an issue: 1) I ordered 2 3-4lbs cuts. They weren’t. Maybe there are issues with the bone throwing off the weight but there certainly wasn’t 3-4lbs of meat to each cut. According to my highly reliable scale each of the steaks I ordered came in between 2.75 and 2.9lbs. 2) Quality wagyu, of any origin, has melt-in-your-mouth fat. These steaks do not. Cooked to rare/mid rare my guests and I spent time spitting out pieces despite proper rendering with a griddle sear and oven-finish. I know that a reverse sear is recommended, but that’s blasphemy. I’ve cooked A5 before with a traditional sear and oven finish, and I know it works perfectly when done properly. If a reverse sear is required, it’s definitely not a quality wagyu. In short, I probably will not be buying these again. I’ll spend far less money on a non-wagyu experience but bang-for-buck will get more from my local non-wagyu tomahawk providers.

Monsterhawks are a presentation piece and that same piece of meat costs $1,000+ in the restaurants. The tomahawks you enjoyed were Stone Axe, which is regarded as Australia's finest Wagyu. I'd take another look at the cooking preparation prior to immediately blaming the product. This Australian Monster Hawk is ready for the Memphis Grill. I will use the reverse sear method.,,,,,,, The meat turned out a little more done than I preferred but it was still AWESOME. So tender and juicy. I really enjoyed it.
