Miyazaki Wagyu is one of the most recognizable and sought-after prefectures to source Wagyu from. Their diet consists of corn, wheat, and barley which yields predictable, deep intramuscular marbling. Additionally, Miyazaki Wagyu is raised longer than many other types of cattle, lending to its very large size.
These NY Strips are intensely marbled and "block cut" (cut in half instead of thinner) to provide a thicker, yet smaller steak.
