OK, this is a cool steak! Otherwise known as Flap Meat, this shocked us with the combination of tenderness and flavor. We prepared it on the grill with our favorite salt/pepper/garlic/butter rub, but this would make fantastic tacos or served like a Skirt Steak with a Chimichurri sauce.
