We've been cooking up Costco New York Primes for quite a while now and they've always been tasty. At 4-5x the price for these, I wasn't holding my breath that they'd be 4-5x as good. All I can say is that these were in an entirely different league; not even a different league, they're genuinely better than anything we've ever had or imagined. They were unbelievably good!
I didn't want to spend this much money on a "steak" but I'm so glad we did. They were so amazing, I actually ordered Japanese A5s right after we ate them! Believe the hype, they're fantastic!
Our steaks were packed well. The ice packs were all still frozen with the exception of one that was partially thawed (think there were five but it may have been four). The steaks were very cold but not frozen.
They dripped more fat than I was accustomed too so they got a lil toasty during the reverse sear (final resting temp of 140.9 degrees) so adjust for that. Otherwise, cooked them indirect at about 225 degrees until they hit an internal temp of 116 and then seared for 40 seconds each side (twice per side).
